Raspberry Gin Cocktail

Nothing says "Happy Weekend" to me more appropriately than a yummy cocktail. And this time of year, with all of the wonderfully fresh produce available, nothing says "yummy cocktail" like a handful of ripe berries.

We recently had some friends over for brunch, one of which is the bartender at the restaurant downtown, and we got to talking about drinks, as per usual. The bartender mentioned a cocktail he'd seen in a magazine recently that featured gin, raspberries, and thyme, and though he couldn't remember the specifics I knew I had to make one, even if I made it up as I went.

So, make it up I did, and what I made up was pretty damn good.

I mean, raspberries and gin? How could I have messed it up?

Raspberry Gin Cocktail

Ingredients

Handful of raspberries
Fresh thyme
Agave nectar
Gin
Club soda
Ice

Instructions

Put about 1/4 tsp fresh thyme into each glass, followed by 4 or so raspberries. Pour in about 1 tsp of agave per glass and muddle.

Put in a couple of cubes of ice, pour in a shot (or more) of gin, and top off with club soda. Garnish with a few more raspberries.

Drink. Yum.
